Baking Bread in a Wood Oven at the Lesachtaler Bread Baking House in Liesing

Dive into one of the most traditional bread crafts in Europe! In the historical bread baking house in Liesing, you will learn the art of baking the original Lesachtaler bread in just three hours – a traditional sourdough bread that has been awarded the title of Slow Food Presidio and intangible cultural heritage, and is also entitled to the designation of geographical indication (g.g.A.) in Europe.
The grain and rye flour come from the fields of local mountain farmers. Together, we will mix, knead, shape, and bake authentic Lesachtaler sourdough, which will then be baked into an aromatic, crispy loaf in the traditional wood oven at the bread baking house in Liesing.
The course is a sensory experience for all who appreciate regionality, craftsmanship, and authentic food. It not only imparts food craft skills but also the living culture of the Lesachtal. The bread baking course is an experience that serves as a conscious counter-model to industrial bread products, conveying nature, handmade craftsmanship, knowledge, and regionality.
At the end, you will take home your own freshly baked bread and a portion of sourdough – as well as the knowledge of how to bake this special bread anytime by yourself.

The production of Lesachtaler bread connects grain cultivation, traditional milling craftsmanship, and rural baking culture into a unique system. This knowledge was recognized as an Intangible Cultural Heritage by UNESCO in 2010 and is proudly preserved and passed on by the next generation of millers and bakers in the Lesachtal. The Lesachtaler bread is also part of the international Slow Food Presidio initiative. These projects work worldwide to preserve traditional foods, old varieties, artisanal production methods, and regional cultural landscapes. Together with the producers, they secure quality, origin, and sustainable production methods.
