Potato soup

Ingredients for 4 servings:

½ onion, finely chopped
4 tbsp. olive oil
2 tbsp. flour
½ l clear beef stock
½ l water
50 g farmer's bacon, finely diced
80 g carrot and celery, finely diced
Salt, pepper, garlic, cumin, thyme, 1 bay leaf
Soup powder to taste
200 g potatoes peeled and cut into 1cm cubes


Stew onion in olive oil until translucent, dust with flour, toast briefly, pour in clear beef or vegetable broth and water, stir until smooth. Add the remaining ingredients and spices and cook for about 10 minutes. Add potato cubes and cook for about 25-30 minutes. Season to taste!
