Chocolate Apple Pie

Ingredients for 12 to 16 pieces:

8 egg yolks
1 pinch of salt
125 g sugar
1 tsp. vanilla sugar
1 tsp. orange zest, grated
1 ts.p lemon zest, grated
8 egg whites
125 g sugar
125 ml oil
2 cl rum
170 g flour
70 g cocoa powder, unsweetened
500 g apples, cut into thin slices
Butter and flour for the tray


Lemon glaze:
200 g icing sugar
1 egg white
1 tbsp. lemon juice


Beat egg yolks with salt, sugar, vanilla sugar, orange and lemon zest until very foamy. Stir in oil and rum. Beat the egg whites and sugar until whipped egg whites. Mix the flour well with the cocoa powder and fold into the yolk mixture with the beaten egg whites, fold in the apple slices. Pour the mixture into a prepared cake tin and bake in a preheated oven at 170 °C for approx. 40 to 50 minutes, then leave to cool. For the lemon glaze mix all ingredients well and spread on the cooled cake.
